An excellent study carried out by BEEBIO ETUDES in February 2013 gives us an overview of organic bread consumption in specialist shops (organic shops in general).

Consumer needs are mainly defined by quality (and less by price). Three concepts are fundamental: freshness, taste and composition. The importance of freshness should lead us to promote a short circuit between production and distribution. The importance of composition should also be taken into account, especially as there is an unmet need to know the precise characteristics of the breads on offer. This reflects the consumer’s constant desire to know and understand the product they are consuming. More than anywhere else, the place where organic products are bought should be a place where products are communicated.

Loyalty to organic bread and increased consumption

53% of organic shop customers and bread consumers eat exclusively or mostly organic bread, and 20% prefer non-organic bread.
