The importance of raw materials
When choosing your Astrié stone mill, it’s important to know where the raw materials for your mill come from.
At Astréïa, we’re keen to preserve the Astrié brothers’ invention and the quality of their product for high quality flour, so we use the same granite millstones as the inventors. We source our granite from Sidobre (in the Tarn region of France), where Pierre and André Astrié chose their material.
This granite gives a finish that is out of all proportion to the tests we’ve carried out with other granites and other materials.

The importance of grinding
When I met the Astrié brothers when I bought their latest mill, which is now in my bakery in Roujan (Boulangerie Chuuuut… in Roujan, Hérault), I asked them for permission to produce their invention myself. Among the many pieces of advice they were able to give me, working with the grinding wheel was one of the most valuable. In fact, experience in grinding wheels is gained through time, hard work and precision.
For the extraction rate to be 80%, the grooving of the grinding wheels must be done with great precision and with a precise shape. We have seen mills with poorly grooved wheels: the extraction rate was of course never achieved.
The importance of maintenance
- Depending on the grain you are going to unroll in your stone mill, it will be important to maintain your mill on a more or less regular basis.
- Depending on how often you use your mill: day and night, every day, every week, every month (…) the regularity of maintenance will be different.
